ACM on a Plate: Fish Maw Soup with Chef Malcolm Lee
Join Chef Malcolm Lee of Candlenut for this cooking demonstration where he creates his version of Fish Maw Soup. His recipe, part of Savour Heritage @ ACM, was inspired by the beautiful kamcheng on display in ACM's Maritime Trade Gallery. "Kamcheng" is the Hokkien term to describe the covered vessels that were widely used by Peranakans. The kamcheng featured in this video has motifs of a phoenix in flight and peony blossoms and has a finial on the cover in the form of a lion. earn to bake a Teh Halia Crème Brûlée Tart with Chef Maxine Ngooi of Tigerlily Patisserie in this baking demonstration. This dessert, part of Savour Heritage @ ACM, was inspired by the Ginger-form teapot on display in ACM's Ceramics Gallery. The ginger teapot featured in the video is modelled as a tall piece of ginger growing from the earth. The skill of the Yixing potter is evident in the realistic manner in which the shape and texture of the ginger is rendered in clay.
